Basic Southern Tomato Sauce Recipe
Ingredients:
Salt
1 Tbsp parsley; chopped
3 Tbsps oil (olive)
1 clove garlic
35 ounces canned tomatoes (plum); chopped coarsely
Instructions:
Place chopped plum tomatoes in plate, reserving their liquid. Cut it into half. Have oil heated in saute-pan. Simmer garlic ’til lightly-golden. Press these pieces well against pan then immediately remove.
Raise oven heat into mid-high then add tomatoes w/ their juices. Stir often while simmering about 10 mins ’til sauce thickens slightly. You add parsley & 1/4 tsp salt, stirring well.
