Lemon Cream Rice Recipe
Ingredients:
1/4 tsp extract (lemon)
2 large eggs
Grated rind of lemon
1 & 1/2 Tbsps juice of lemon
3 c milk
2 Tbsps powdered sugar
3/4 tsp salt
1/2 c sugar
1/2 c rice
Instructions:
Have rice cleaned then place it in double-boiler. You add the milk then cook ’til soft. You add beaten eggyolks, salt, juice of lemon, grated rind & sugar. Cook ’til mixture is thickened.
You pour mixture into greased bake pan. Beat eggwhites ’til stiff then fold this gradually into sugar powder & extract. You pile it over pudding then bake it in moderately-heated oven ’til browned.
Best when served w/ cream.
